Chefs don't usually require bongs to prepare your food (well, some do, but they don't let you see). Desnuda is an exception. Order the smoked oyster shooters at this small ceviche bar, and out comes the gravity hitter. Chef Christian Zammas burns tea leaves and Szechuan peppercorns in it, traps the smoke in inverted shot glasses, and sets them over freshly shucked oysters.
