Totto Ramen While a steamy bowl of soup might not be the most appealing thing when it’s hot out, ramen fanatics should still be excited by the arrival of this organic soup joint, from the owner of the Yakitori and Soba Totto restaurants. Chef Hideto Kawahara, who owns several ramen shops in Japan’s Fukuoka prefecture, is behind the menu, which features three types of noodles, each paired with a different broth: miso, paitan (creamy chicken) and shoyu (soy-sauce based). Later this summer, look for a second midtown location, specializing in tonkotsu (pork) broth. 366 W 52nd St between Eighth and Ninth Aves (212-582-0052)
