Anthony Hopkins does wonders with his brief screen time (16 minutes total), but it's what happens offscreen that really establishes his brilliant menace. Take this shocker escape, after Lecter lunges at a hapless guard: The bloodied man is rushed to the hospital, but no one is expecting the monster to have hidden under the poor cop's face.—JR
