New York's top ambassadors of New Nordic cuisine—including Aska's Fredrik Berselius, Acme's Mads Refslund and Daniel Burns of Luksus—join forces for a seven-day celebration. Gotham chefs will team up with Northern toques: Michelin-starred Marcus Jernmark (Aquavit) and Gustav Trägårdh (of Gothenburg's Sjömagasinet) will dole out fennel-salted Norwegian halibut and beet-cured gravlax at their joint Swedish dinner ($205). The master chefs will also share their expertise at the International Culinary Center: Norway's Morten Sohlberg will lead a class on smorgasbord, a traditional Scandinavian buffet of cold dishes ($149).
