Join veteran chef Eric Ripert (Le Bernardin) and James Beard Rising Star winner Christina Tosi (Momofuku Milk Bar) for a discussion about the emotional and cultural influences of flavor. Led by moderator Christine Muhlke (Bon Appétit), the toques will explain how they explore new flavors using classic ingredients, as in the cereal ice cream that Tosi makes from cornflakes, brown sugar and milk. Superfans should stick around after the talk, when the duo will be signing copies of their respective books, On the Line and Momofuku Milk Bar.
