New York's ramen craze has shown no signs of slowing down, and thanks to Japanese restaurateur Bobby Munekata, the city's slurping options are now richer than ever. The noodle impresario christened two outstanding ramen-yas on either end of 52nd Street: Totto Ramen to the west, and Hide-Chan to the east. But it was the pork tonkotsu broth at the latter—a specialty of Japan's Hakata region—that tempted us say sayonara to the lines at Ippudo. Loyalties will inevitably be divided, but few would deny that Hide-Chan's ma-yu ramen—which derives its deep, smoky flavor and inky appearance from charred garlic oil—is as life-affirming a bowl of soup as you'll find anywhere in NYC. 248 E 52nd St between Second and Third Aves, second floor (212-813-1800)
