When ordering egusi and fufu at this Nigerian restaurant, the chef may ask you, “Are you going to use your hands?” If you say yes, you will receive a bowl full of water for you to wash, as you might in, say, Lagos, the capital city of more than 12 million people on the coast of Africa’s most populous country. You’ll need it, because eating egusi and fufu is messy. Not in the mood for fish? Ask for an assortment of feet, skin, and tripe.
