Peripatetic chef Ryan Skeen (Resto) has taken his talents to an intimate 35-seat restaurant in Harlem. Skeen will reintroduce the flap-meat–and–beef-cheek burger that first gained popularity at Irving Mill, along with more upmarket dishes like rabbit-and-ratatouille sausage with spaetzle.
