Southern-inflected eats include thinly battered, thickly sliced fried tomatoes and surprisingly satisfying crabmeat puffs stuffed with cream cheese. As the name suggests, catfish makes several appearances: as salty, smoky fried “poppers” with a green-onion rémoulade, or slathered with Cajun seasoning and panfried.
