AEROPRESS

What it is: Amid the crystal-clear glassware of the new brew school, the AeroPress is something of an ugly duckling. But the understated plastic pump is efficient (it takes about a minute to brew) and damn-near foolproof. Baristas invert the tube and stir grinds with hot water in the cylinder, before flipping the device and pressing the coffee through a thin paper filter. The resulting joe is consistent and full-bodied, without a speck of grit.
