Milan-born chef-owner Luca Marcato has a secret weapon: Luis Lozada, the reserved fellow who brings your bread basket and pours your water. He’s also the trattoria’s gifted pastrychef and pasta maker. Savor the warm pear tart with Gorgonzola—flaky, light and just this side of dessert—and a choice of fresh tagliatelle, pappardelle or bigoli topped with a toothsome duck, lamb or veal ragù.
