Wally Chin, the proprietor of midtown stalwart Chin Chin, turns from upscale Chinese cuisine to Asian-inflected American eats. He brought on chef Chris Cheung (Monkey Bar) to create an elevated comfort-food menu that includes dishes like liquid-foie-gras buns, Asian BBQ ribs with macaroni and blue cheese, and whole fluke stuffed with king crab and pork-chili sauce.
