The flaming glories of Szechuan cuisine light up Wu Liang Ye’s sedate Rock Center location. The restaurant’s versatile menu and popularity have spawned Murray Hill and uptown siblings. Poached rooster with Szechuan-peppercorn vinaigrette and sliced conch with roasted-chili vinaigrette, both served cold but tasting fiery hot, are superb examples of how spices can enhance, but not overpower, the main ingredient. Sensible patrons add a dish of simple sautéed greens (spinach or loofah with garlic) as an antidote.
