The Feed first look: Francois Payard's FPB

The Feed had the pleasure of a preview of Francois Payard's new Houston Street bakery FPB last night. The takeaway: The glass-enclosed kitchen, which will provide a view of the chefs taming batter and whipping meringue, is an excellent, voyeuristic touch. The pastries here feel less baroque than those Payard was known for at his shuttered Upper East Side bistro—a smart move for this block, where even casual French Viennoiserie could be a tough sell.
Still, if the packed house and curious neighbors milling about the entryway last night was any indication, Payard—one of Time Out New York's top ten pastry chefs—could have a hit on his hands. Decide for yourself when the place opens on September 21.
