The Story of Sushi
Sushi expert and Iron Chef America judge Trevor Corson moderates a panel of chefs at this lecture about the evolution of Japan's most ubiquitous epicurean export. Chefs like Hiroji Sawatari (formerly of Sushi Yasuda) and Bun Lai (of Miya's in New Haven, Connecticut) will trace sushi's history, from its origins in Asia to its modern incarnations in New York.
