Sushi expert and Iron Chef America judge Trevor Corson moderates a panel of chefs at this lecture about the evolution of Japan's most ubiquitous epicurean export. Chefs like Hiroji Sawatari (formerly of Sushi Yasuda) and Bun Lai (of Miya's in New Haven, Connecticut) will trace sushi's history, from its origins in Asia to its modern incarnations in New York. Summer Sausage
Engage in the best kind of sausage fest with Meat Hook butcher Ben Turley. Taste a selection of house-made wieners; then learn how to grind, blend and case links in your own kitchen. Students leave with a haul of sausages, plus cooking tips from Turley. Brooklyn Kitchen. 6:30--8pm; $75.
