Impro'Vista restaurant, bar and cafe in the heart of Paris in the Opera quarter is a stylish, playful Italian restaurant with a warm and generous heart. The decor is what the French charmingly call a loft 'New Yorkais', with neutral walls touched with graffiti ambience, a selection of cool if unmatching chairs, and a large shop window so you can look out on the passing scene. The heated all-season terrace is a treat. The striking stainless steel bar transforms at lunch and dinner into an open kitchen where chef Jess creates his refined Italian dishes from the finest possible ingredients superbly sourced. There are plate-busting antipasti, generous risottos, fine meat and fish dishes and both classic and innovative pastas and pizzas. The wine list is entirely Italian -- true to Impro'Vista's passionate commitment to excellent Italian cooking.
