l'Accolade restaurant in Paris not far from the Place du Marechal Juin is a simply decorated temple of gastronomy. Chef Sebastien Altazin, who trained with the starry and excellent Michel Rostang, creates a new menu each day having chosen the freshest of seasonal ingredients with great care. His dishes are excitingly new yet steeped in tradition: pigs' ears croustillant with lambs' lettuce and mustard salad, seabass fillet with cockles with herbed crushed potatoes, vanilla panna cotta with raspberry coulis.
