Casa Olympe

48 rue St-Georges, 9th

Dominique Versini (aka Olympe) is one of the rare female chefs in Paris to enjoy celebrity status. Her base has Roman ochre-painted walls, a pretty Murano chandelier, oil paintings and an almost entirely male, suited crowd. In truffle season, you might wisely order a potato salad laced with this earthy treasure; don’t forget to try also the squash soup with chestnut and foie gras, and for dessert, Versini’s home-made sorbets.

I had a very good evening meal at this restaurant. To start, pigs ears in a caper sauce was excellent, the sauce had an exquisite piquancy, the pigs ears just the right combination of textures from the slightly resistant to the meltingly soft and gelatinous. The crispy fried sweetbreads were just right, again with the contrast of texture which makes this dish so attractive. My bananas baked in wafer thin filo were a beautiful foil for the the earler dishes, and the sorbet which accompanied them provided a refreshing sharp fruity tang with which to finish.
