This rustic auberge is a fine embassy for the simple but hearty fare of central France. Go easy on the complimentary pâté and country bread – you’re going to need your appetite later for the bowl of green lentils cooked in goose fat with bacon and shallots, followed by the rôti d’agneau with the signature aligot. Of the regional wines, the quite fruity AOC Marcillac makes a worthy partner for a successful meal.
