Yannick Alléno produces glorious contemporary French luxury cooking. Turbot is sealed in clay before cooking, then sauced with celery cream and a coulis of flat parsley; Bresse chicken stuffed with foie gras and served with truffled sarladais potatoes (cooked in the fat of the bird) is breathtaking. A fine cheese tray comes from Quatrehomme, and the pastry chef amazes with his signature millefeuilles.
