Thierry Breton is from Brittany, and so proud of his origins that he sports the Breton flag on his chef’s whites. Marinated salmon with purple potatoes served in a preserving jar is succulently tender; as for the rabbit, braised with rosemary and Swiss chard, it might just be the best bunny in town. Blackboard specials follow the seasons: game lovers are spoilt in the cooler months with wood pigeon, wild boar and venison.
