This long-running Basque address has become a hit since the arrival of chef Stéphane Jégo. Excellent bread from Poujauran is slathered with tangy, herby fromage blanc, as are starters like little rolls of aubergine stuffed with perfectly seasoned braised lamb. Tender veal shank comes de-boned with a lovely side of baby onions and broad beans with tiny cubes of ham, and there’s a great wine list.
