Michel Cousin bakes up to 23 different types of organic loaf in his wood-fired oven - varieties include the flutiot (rye bread with raisins, walnuts and hazelnuts), the sarment de Bourgogne (sourdough and a little rye) and a spiced cornmeal bread.
