Two of Sands Bethlehem's resident drink experts share their favorite concoctions—complete with recipes to hold you over until your next visit. 

Jason Lonigro, the general manager at Emeril’s Chop House, came up with the following three cocktails, which can be ordered at either Emeril’s Fish House or Emeril’s Chop House:

Recipes for great Sands Bethlehem cocktails

Bourbon-Berry Smash

Bourbon-Berry Smash

“This cocktail is built for warm weather. The crisp acidity from the lemon gets a fruity lift from the blackberries. The Angostura bitters help give this cocktail a slight spicy backbone to help make this a great way to start your evening.”

•   1 ½ oz Buffalo Trace bourbon

•   ¾ oz lemon juice

•   ¾ oz rich Simple Syrup*

•   4 dashes Angostura bitters

•   8 blackberries

Combine all ingredients into a shaker tin, top with ice and shake hard till cold. Pour entire drink into double old fashioned glass. Garnish with a fresh bunch of mint.

*Rich Simple Syrup

2 parts Sugar in the Raw

1 part water

Combine ingredients into a saucepan. Bring to a simmer until sugar is dissolved. Let cool and store in the refrigerator.

Emeril’s Manhattan

Emeril’s Manhattan

“This is our elevated take on the classic Manhattan #2 from Jerry Thomas’s Bartender’s Guide. Highlighting our hand selected Knob Creek Single Barrel Bourbon we use Carpano Antica Vermouth to add complexity and depth to work alongside the bitters. To bring out the citrus notes from the Solerno Blood Orange we garnish with a thick cut orange peel. This is a great drink before or after dinner.”

•   1 ½ oz Knob Creek Single Barrel

•   1 ½ oz Carpano Antica Formula vermouth

•   ½ oz Solerno blood orange liqueur

•   3 dashes Angostura bitters

•   3 dashes orange bitters

•   1 thick-cut orange peel

Combine all ingredients into a mixing glass, and stir 30 times till cold. In a rocks glass, place 1 large ice cube, and the thick cut orange peel into it after expressing the oil. Strain the cocktail into a rocks glass.

Bloody Fisherman

Bloody Fisherman

Some might say that a bloody mary is only good for brunch. The bloody fisherman is a well-balanced riff on the bloody mary that is built to be sipped while you’re enjoying a table full of fresh seafood. Instead of batching all of the ingredients, we make a pre-mix with the citrus and savory elements to make sure that each one is just like the next.

Glassware: Highball Glass

Garnish: Pickled Okra & Olive

Ingredients:

•   1 oz pre-mix*

•   1 ½ oz Absolut Peppar vodka

•   4 oz Ocean Spray Bloody Mix

•   1 barspoon prepared horseradish

•   1 pickled okra

•   1 olive

Combine all ingredients and stir well. Strain into a highball glass over a Collins ice cube.

*Pre-Mix Base

Yield: about 750ml

Ingredients:

  • 8 oz lemon juice
  • 8 oz Worcestershire sauce
  • 1 tbl Old Bay
  • 1 tbl finely-ground black pepper
  • 1 tsp. Ground Cumin
  • 1 tbl Crystal Hot Sauce
  • 1 tsp. Molasses

PREPARATION:
Mix all ingredients together in a mason jar and shake vigorously. Keep refrigerated.

Shane Savant, the general manager at Vision Nightclub, submitted the following cocktails and explained that these popular drinks are very spring and summertime inspired and are perfect for sipping during a night out at Vision Nightclub.

Sunny Nighttime

Sunny Nighttime

• 2 oz Svedka mango pineapple

• 2 oz Pineapple juice

• 1 oz cranberry juice

Shake, then pour into a martini glass. Garnish with an orange slice.

French Savage

French Savage

• 1 oz Svedka Vanilla vodka (1 oz)

• ½ oz Chambord

• 3 ½ oz pineapple juice

Shake, then pour over ice into a rocks glass. Garnish with an orange twist.
