Hiro Sone and Lissa Doumani, the team behind Terra in Napa Valley, have brought their Japonesque sensibilities to this stylish and intimate dining room in the St Regis Hotel. The menu emphasises raw - sashimi, crudo, tartare, carpaccio - and southern France: grilled duck with a ragout of wild mushrooms, with a confit of giblets and bok choy, say. Everything is exquisitely prepared and presented. The bar features limited-edition sakes and small-lot wines.
