The WGS’s visiting foodies share their favourite spots in Singapore

Whampoa Club, Shanghai, China ‘I like going to Tian Jin Hai at the 24-hour kopitiam on MacPherson Road for excellent steamed shark’s head. It is served with soya sauce and coriander, and the marrow-like texture is very unique. Otherwise, Ding Xing Fish Head Steamboat’s hotpot with pomfret in Tiong Bahru is excellent. The fish bones and head are pan-seared with ginger, combined with fried taro and danggui herb to make a great basic stock. The fish fillet is then served with lots of tofu and vegetables, and one can pick various seafood from their live fish tanks and have it cooked as one wishes.’

Not to mention there are not many Persian restaurants in Asia. I also like to stop off for a quick bite at Marmalade Pantry if I can. If I am not eating in a restaurant, you would probably find me eating street food in places like Little India. Personally, I think you can stop anywhere and eat some of the best food in the world in Little India.’

The Brasserie by Philippe Mouchel, Melbourne, Australia ‘The chicken rice at stall number 10 at Maxwell road food centre is superb. Another recommendation is the food at Warong Nasi Pariaman at North Bridge Road. For a high-end meal, I like Iggy’s at the Regent hotel.’

The Chinoise Story, Shanghai, China ‘My favourite food in Singapore is, ironically, durians from Malaysia. If you were to ask me where I like to eat in Singapore, it has to be Jade at the Fullerton hotel. I love their flower crab salad.’
