In addition to this month’s islandwide food festival, would-be chefs can learn the secrets of good cooking at these local classes. By Kimberley Dadds
Cookery Magic
It’s literally ‘home cooking’ at Cookery Magic – students take lessons with teacher Ruqxana Vasanwala from the comfort of her own abode. This month, Vasanwala introduces a number of ‘Heritage Cooking Classes’ that go beyond staple dishes and offer indigenous Singaporean specialities that have faded from both memory and kitchens. Students will use recipes from cookbooks published in the ’50s to make dishes such as chicken marjina and kalia papaya (beef curry with papaya). For dessert, take part in the Retro or Old Fashion Cakes classes, featuring no-longer secret recipes from guest instructor Tayeb’s grandmother. You can’t lose when you’re taking a leaf out of Grandma’s cookbook.

The Patissier’s Kitchen
‘Baking school’ classes, designed by executive patissier Tan Siang Yee, will be held in this French restaurant’s kitchen. Throughout July, groups of no more than 12 pupils get a crash course in ‘Basic Chocolate’. After a 150- minute demonstration outlining the art of praline- and truffle-making, students can get messy moulding their own candies and fillings in a 3½-hour hands-on session. Other courses cover pastry making and Earl Grey-infused chocolate.
