If you’re finding the heat around Marina Bay too harsh, move under the sheltering Esplanade Bridge to the respite of sofa seats. Spanish chef Harvey Tenacio helms the kitchen of this split-level, 4,000 sq ft ‘sun tapas bar’ (sol tasca). Of the over 30 hot and cold tapas, the sautéed live mussels in a light, tangy cream sauce ($18++) and the buttery whipped bacalao (deep-fried dried codfish with béarnaise sauce balls, six for $8++, dinner only) make the best starters. Saffron lovers should try the paella Valencia (bomba rice with plump squid, prawns, mussels and chicken, $24), even if the rice may come a wee bit undercooked. Switch it up a bit and skip the sangria – go instead for the ambrosial Under the Bridge cocktail (vodka, lychee liqueur, strawberry purée and cranberry juice, $16).
