Yes, authentic Mexican food is hard to come by in Singapore, but Viva Mexico – part of the recently renovated Cuppage Terrace – comes the closest, starting with a bona fide Mexican chef in the kitchen and ending with a rich pumpkin dessert baked with cinnamon, sugar and cream. Things bode well when free corn chips and two kinds of salsa arrive (literally) seconds after you sit down, with a salsa verde that’s good enough to drink. Though there’s an eclectic side to the menu, stick to the standards, particularly the chicken enchiladas – boneless chicken breast wrapped in soft corn tortillas, with a side of refried beans looking a bit forlorn without a side of rice. Also notable is the depth of the drink menu (another authentic trait if you ask us), which includes more than a dozen kinds of 100 per cent Agave tequila – plus reasonably priced $10 Jose Cuervo shooters – and a delicious, smoothie-style blackberry margarita. Service is top-notch, attentive and knowledgeable; we now know the difference between sangria and sangrita.
