The Park Hyatt Tokyo is going all out this year for their Valentine's and White Day chocolate lineup: rather than just presenting any fancy choccies, they've teamed their executive pastry chef Pascal Cialdella with Argentinian-born artist and calligrapher Aerosyn-Lex Mestrovic to create one very artsy chocolate, which is definitely a worthy pick as honmei choco (the kind of chocolate given to the person you like, rather than out of obligation). Their collaboration was based on the concept of yin and yang, to represent the opposing yet dual and complementing forces at play. The chocolate itself was crafted from Valrhona's Illanka 63% white cocoa beans sourced from Peru, in a nod to the artist's South American roots, whereas the packaging represents a modern interpretation of Japanese calligraphy. In terms of flavours, you can expect some strong blueberry, blackberry and black grape notes, and the chocolate tablet has even been given an extra touch with Mestrovic's original artwork imprinted in gold.
