It took a chef from Wales to introduce Vancouver to a modern regional style of cooking now known, and widely emulated, as Pacific Northwest. Nearly 20 years ago, John Bishop committed himself to using nothing but the freshest seasonal bounty of the region's oceans, rivers, fields and forests. The kitchen is now totally organic and run by the estimable Andrea Carlson. Bishop's continues to attract a loyal clientele of fashionable foodies, who come for the flavour and the restaurant's consummately charming but ever quirky host, who can sometimes be found trailing dirt to starched white linen tables to show off gargantuan beets and freshly foraged funghi.
