The annual pig cook-off is one of the most decadent events of the year. This year, the five competing chefs, Nathan Sears of The Radler, Nicole Pederson of Found, John Manion of La Sirena Clandestina, Christ Marchino of Spiaggia and Thomas Rice and Kurt Guzowski of TÊTE Charcuterie, are tasked with making six dishes from a whole heritage breed pig. The winner goes on to compete at the Grand Cochon event at the Food & Wine Classic in Aspen for the title King or Queen of Porc (Nightwood's Jason Vincent took the title in 2012). Tickets to the event score you porky dishes from each chef, plus cheeses from Pastoral and oysters from Pearl Oyster Tavern, along with selections from a bourbon bar and a mezcal bar.
