Matthew Eversman at 2011 Eat Out Awards

An almost impossibly young executive chef from the Chicago burbs has emerged as a new one-to-watch on the Chicago dining scene. With training at the Cooking and Hospitality Institute and gigs at Charlie Trotter’s and May Street Market, Eversman has paid his dues. This year, he took on Vietnamese cuisine at [node:91044 link=Saigon Sisters;] and came out a winner, of the [node:14353719 link=Breakout Chef of the Year;] award, that is. Jason Heidemann had a chance to talk to the young chef and sous chef John Boisse at last night's Eat Out Awards.
