Chef Ricardo Zarate has been hailed as a master of modern Peruvian cuisine; recognized as a 2014 James Beard Award Semifinalist, and a 2011 Food & Wine “Best New Chef.” Known for serving inventive dishes that highlight the country’s multicultural influences, Chef Zarate is now doing a pop-up to bring Angelinos a new limited-time Peruvian dining experience, Once. Chef Zarate will take over the kitchen at Santino’s Santa Monica every Thursday, Friday, and Saturday—for an undisclosed length of time.
Meaning “eleven” in Spanish, the pop-up series Once (on-seh) is a nod to Chef Zarate’s place as the 11th child in his family, and inspired by interpretations of early food memories in his native Peru. The menu will always feature 11 à la carte plates (not including dessert)—all intended for sharing—and will change weekly based upon what’s available at the local farmer’s market. Dishes will include versions of Peruvian staples such as Lomo Saltado, Ceviches, Tiraditos, and more!
