Under the command of chef Carlos del Portillo (with recognized experience in the Velázquez 128 restaurant), Bistronomika presented with unfamiliar and tasty seafood specialties like coruxo, the borriquete, red snapper and a variety of wild specimens imported from Galicia, Asturias, Cadiz or the Canary Islands. In this selection other products are added as broiled shrimp with collards and plankton, grilled octopus with cream of black garlic and pepper, stuffed bao rib rose xata, delicious Asturian veal, or a Cantabrian picasuelos developed a style pepitoria nikkei with hoisin plum sauce and cashew nuts instead of almonds.
