This longstanding city bar has a new look, and a new name

The bar formerly known as The Long Room has completed its $4 million transformation into The George on Collins. While the venue used to be the go-to after-work spot for the city’s suits, the revamped space will be open all day for lunches and cocktails when the sun goes down.

It has taken nearly half the year to transform the venue, but the Hecker Guthrie-designed space looks a lot fresher than its predecessor. There is stylish leather booth seating complete with linen curtains if you want more privacy, and a moody granite bar made for leaning against and more casual dinners.

Masterchef 2018 contestant Khanh Ong has developed a Vietnamese menu alongside head chef Quim Hernandez, catering for a lunch and dinner service all the way to late-night bar snacks. The lunch and dinner offering includes share plates and casual options like bo la lot, Ca Mau sticky chili caramel chicken wings and a Khmer-style salmon ceviche. We can’t wait to see what else this new bar and subterranean restaurant has in store.
