You might not have heard of Feathertop – it’s at the top of the mountain and they don’t really advertise, but this year, it's one of the places you need to know. The new kitchen team is obsessed with local produce and they're turning it into hefty tapas dishes of meaty cassoulet (everyone's favourite duck and bean stew), goat's cheese-stuffed zucchini flowers with earthy-sweet beetroot jelly, and buffalo balls. We're almost hoping that they're testicles given the mountainous surrounds, but are happy enough when they transpire to be juicy, peppery meatballs with a dark golden jus and creamy parsnip pureé. The warm woody walls, Chesterfields and candles make this our pick for furring up and making like an heiress with cheese boards and local wines.
