After a lifetime in the kitchen—behind the line at steakhouses and pioneering Viet-Cajun cuisine in Miami—Cesar Zapata is finally ready to give diners a taste of his Colombian roots. At Arepitas Bar, the Medellín-born chef leans into the modern, funkier side of Latin food and kicks his creativity into high gear. Acting as a vehicle for delicious toppings, Zapata’s cornmeal cakes are thick and toothsome, with an impossibly crispy exterior and soft, doughy insides. Once griddled, they’re loaded with only-in-Miami ingredient combos, like buffalo-style chicken and smoked salmon with cream cheese. Purists craving a bandeja paisa, Colombia’s signature dish, may not recognize the plated feast in bowl form, but trust us, this mound of rice, beans, sizzling chicharrón, chorizo, avocado, plantains and a fried-egg topper will put you to bed just as fast as the original.
