Over the past few years, Miami Smokers James Bowers and Andres Barrientos have been reliable fixtures on the local food scene, spreading bacon and cured meats across the city like some sort of two-headed, protein-loving Santa Clause. They now have a Time Out Market Miami outpost—a concept that makes everyone’s mouth water, especially meat lovers around the city. In South Beach, the gentlemen experiment with charcuterie (like hand-cured salami), champion their favorite artisanal cheeses, invent new sandwich combinations and double down on bacon. The results are pure smoked umami magic.
