Time Out says

There are the people’s chefs, there are the chef’s chefs, and then there’s Norman Van Aken. A Florida veteran who was conquering “local” cuisine well before it was the buzzword on every menu in Miami, he has racked up James Beard Awards and an entire state of loyal customers. But Van Aken isn’t even close to being done yet, as he recently proved with Three, his phenomenal Wynwood restaurant that, once again, placed him atop a city in which the culinary competition grows fiercer every day (Van Aken parted ways with Three in early June). K’West, his concept inside Time Out Market Miami, is a delicious retrospective of dishes the chef hatched along his winding journey, from his hometown of Diamond Lake, Illinois, to the Florida Keys, his adopted home.
