In its brief life span, chef Shuji Hiyakawa’s tranquil Upper Eastside restaurant has been a mainstay for all Miami sushi lovers. Offering a pleasant contrast to the impossible-to-get-into omakase dens that have swept the city, the spot’s thoughtful, fast-casual philosophy provides all the quality with none of the fuss. Wabi Sabi’s focus is on chirashizushi, a form of deconstructed sushi that’s elegantly arranged in bowls. For example, Hiyakawa’s sushi bowl is a vibrant, colorful work of art in which every element is intentional. Eaters get their pick of fresh seafood, veggies, rice, greens and sauces. It’s delicious, hearty and an entirely new way of experiencing the classic Japanese staple.
