When Pascal Barbot opened Astrance, he was praised for creating a new style of Paris restaurant - refined, yet casual and affordable. A few years later, this small, slate-grey dining room feels just like an haute cuisine restaurant. Most customers, having reserved at least a month ahead, give free rein to the chef with the 'Menu Astrance'. Barbot has an original touch, combining foie gras with slices of white mushrooms and a lemon condiment, or sweet lobster with candied grapefruit peel, a grapefruit and rosemary sorbet, and raw baby spinach. Wines by the glass are reasonably priced.
