CDA of Cain
Always stoked to delve into the dark arts, we teamed up with Seattle’s mighty death metallurgists, Black Breath for CDA of Cain. Taking its name from the song “Seed of Cain,” from the new LP Slaves Beyond Death, our Cascadian Dark Ale starts slow but hits hard and heavy with massive doses of Cascade and Centennial hops layered on a smooth obsidian malt body. We added fermented Chinese Puh-er tea to conjure up the cold black earth of a forgotten Northwestern graveyard at midnight. Like Black Breath’s music, it sounds horrifying, but is utterly delicious.

Malts: Maris Otter, Flaked Barley, Crystal Rye, C-135/165, Midnight Wheat, Chocolate, Roast
Hops: Chinook, Centennial, Cascade, Simcoe, Meridian
OG: 1.066 TG: 1.016 ABV: 6.56 IBU: 75 SRM: 36

Dying Embers
Imperial Pepper / Herbal Stout
The song, “Cold Old Fire,” by Dublin, Ireland, folk band Lynched, inspired this dark concoction. It's meant to evoke grey days in Dublin & memories of good times and bad spent by a fire, whose flame, like a glass of tasty, strong beer, inevitably will disappear. We sought out flavors to mimic the atmosphere of sitting around the “dying embers of a cold old fire.” Tao of Tea’s pine-smoked black tea provides the smoke, while organic jalapeno peppers provide the slight heat. Wintergreen leaves bring up the last note on the palette, signifying the chill that sneaks up like a thief around such a scene. Stout and black tea– well, in terms of Dublin, they sort of speak for themselves, don’t they?

Woods Witch Herbal Extra Pale
Our Herbal Extra Pale features soft citrus and floral flavors and aromas, balanced by mild bitterness and bready British Maris Otter Malt. We used Tao of Tea's Organic Lemon Myrtle and Hibiscus to add complex herbal tones, paying homage to the time before hops ruled supreme.
