During this dinner you will have the opportunity to pair earthy, spicy Chilean wines, with a California Flair. The wines from Alcance are made by Andres Sanches, a native from Chile and together with Winemaster Randy Ullon, they've receive many gold medals and 90+ scores on the wines they produce.
Torey Ellick, a Regal Wine Company representative will be co-hosting and sharing with us all about these delicious wines.

As it is tradition at Cueva Bar, we have invited a friend, who is a very talented local culinary expert, and Director of UrbanLife Farms new culinary intiative "Tables", Joshua C Kemble. Together we will be preparing a four course pairing menu with the following wines. While focusing on using as much local produce and/or ingredients, we will be sourcing the rabbitts from Radio Acres Farm in Encanto, and produce from Specialty Produce.

I. San Francisco Beet Terrine
[yellow beets][red beets][truffle oil][spiced goat cheese][sweet and spicy pistachio crumb]
-Gran Reserva Carmenere.

II. Beef steak tartare
[bacon fat confit quail egg ][chimichurri dust ][shaved radish][baguette crisps][balsamic reduction]
-Gran Reserva Merlot

III. Rabbit San Diego Mole
[sope] [Frijoles y Chorizo] [Curtido de Repollo Rojo] [Turmeric Crema Capuchina]
-Gran Reserva Cabernet Sauvignon.

IV. Buttermilk Panna Cotta,
[Fermented Blackberry] [Chile de Arbol y Pepita brittle]Gran
Gran Reserva Bravura red Bourdoux Blend.
