Sushi Cho is opening a gala dinner in collaboration with Koji Koizumi, the head chef behind 3 Michelin Star restaurant Kohaku. Located in the bustling district of Shinjuku, Tokyo, Kohaku opened in 2008 and earned 2 Michelin Star 3 years into the business, and gained another start in 2015. Koizumi, currently 36 years old, started this restaurant at the age of 28. With his unique take in Japanese cuisine, he is considered a ‘new star’ within the community. The ‘nouveau kaiseki’ (kaiseki being a traditional multicourse Japanese meal) served at Kohaku is comprised of seasonal traditional ingredients yet takes a modern twist with Koizumi’s exceptional creativity. The chef uses each ingredient carefully to its full potential and is also known to integrate haute ingredients like truffles and foie gras (not used in traditional Japanese cuisine) into the meal.
