Modern Indian restaurant D'Bell puts on a four-course dinner ($48) to infuse a touch of spice in a Singaporean Christmas. Starters include beef ball shaslik, grilled chicken in a tomato basket and tandoori paneer tikka. Choose from main courses such as Irish oxtail stew, tandoori turkey roulade and pan-seared herb crusted halibut fillet with couscous pilaf and rum sorbet. Desserts include with strawberry short cake glazed with red wine and berries compote.

Executive chef Pierre Burgade at the Raffles Grill puts on a five-course dinner set on Christmas eve ($298). Over at the Bar & Billiard Room, oysters, duck rilette, Australian sirloin steaks and Christmas turkey feature on the buffet spread.

Priced at $188 per person on Christmas day, dishes such as truffle crusted scallop with cured ham chips, lobster carpaccio and silky cuttlefish tagliatelle with sea urchin, orange fish roe and ponzu emulsion will be on offer. Noteworthy deserts include almond meringue with chestnut cream, apricot compote and chestnut sorbet as well as, poached pear in spiced syrup.
