Featuring the culinary skills of Chris Bolyard, owner and head butcher of Bolyard's Meat & Provisions, CAM presents a museum tour followed by a four-course “nose-to-tail” dinner inspired by current exhibitions.

$75; $50 for CAM members
Tour 6:30 pm / Dinner 7:00 pm

Amuse: Pork bone broth shooter with pork rind, sweet chili sauce

First course: ‘Nduja, focaccia, egg, watermelon radish, crispy pig ear salad

Second course: Trotter-filled tortellini with shaved heart, fermented cabbage, mustard jus

Third course: Confit of coppa, dirty farro, pickled carrots, saba reduction

Fourth course: Whipped lard and marscapone filled Swiss roll with smoked pecans, caramel, and apple butter
