What's better than a classic breakfast? A classic breakfast that's been totally overhauled.

It’s hard to say no to HBK’s classic strawberry stuffed French toast or their bacon and chorizo ravioli. The French toast comes with strawberries, ground cinnamon, mascarpone cheese and icing sugar whilst the ravioli is served with baby spinach, poached eggs, heirloom cherry tomatoes plus corn and capsicum puree and snow pea tendrils. Need we say more?

If you’re after a classic, no-fuss breakfast look no further than Blackbird Café. There’s all the usual brekkie go-tos – smashed avocado on toast; bacon and eggs; eggs Benedict (with ham, avocado or smoked salmon); and fruit salad. For sweet tooths try Belgian waffles with maple syrup and fresh strawberries or an acai bowl for those who are a little bit health conscious. On weekends, from 10am to 3pm, they also do a brunch with that impossible to resist bonus: bottomless mimosas.

Pancake lovers won’t be able to resist Whitewater’s Green Tea Pancakes. Served with mint chocolate chips, mascarpone, maple syrup and seasonal fruits, these babies have it all. Pancakes not your thing? Don’t worry, there’s a bunch of equally delicious brekkie options like the veggie omelette, french toast and eggs benedict.

If you’re a juice fanatic, this café is for you. Make your way through Café Birkenhead’s selection of ten juices including Invigorator (apple, lemon, celery and cucumber); Energy Booster (watermelon and mint); and Digestion Plus (pineapple, apple, mint and ginger). Try the double brie and fresh figs with scrambled eggs, crispy prosciutto, cherry tomato and smashed walnut for something different, or opt for the signature pancakes with fresh fruit, chopped pistachios, ricotta cheese, mint and maple syrup if you crave a sugar hit.

Casa does all the classic breakfast options but with their own lil' Italo twist. Try out the bresaola omelette for eggs with an accent or the ambrosia breakfast if you're craving a veggie hit. It comes with cherry tomatoes, sliced avocado, mushrooms, feta and pesto. If you’re after a coffee but also craving dessert, you can’t go past the classic affogato – coffee served with vanilla ice cream. Mhmm, delicious.
