The best restaurant in Uruguay is coming to Miami

Famed beachside restaurant Parador La Huella will pop up at Amara at Paraiso for one weekend this June.

Reservations are now open for a one-weekend-only Miami pop-up of Parador La Huella, one of the world’s most sought-after beachside restaurants. The Uruguayan grilled seafood destination will take over the second-floor terrace of Amara at Paraiso from Friday, June 21 through Sunday, June 23.

La Huella first opened on the sands of the beachside town of Jose Ignacio in 2001, dreamt up by three friends, Martín Pittaluga, Gustavo Barbero and Guzmán Artagaveytia. In the 20-plus years since, it's earned the title of Best Restaurant in Uruguay by Latin America’s 50 Best Restaurants and Best Beachside Restaurant on the Planet by Bon Appetit magazine, among other accolades.

Helmed by chef Vanessa González, La Huella's weekend pop-up will showcase the restaurant's signature seaside specialties and grilled meats on Amara’s breezy bayfront terrace. The space will be transformed to evoke the original's laidback beachside ambiance, backdropped by live music and waterfront views. Each experience includes a welcome drink created by La Huella’s lead mixologist, passed canapes and a four-course, family-style dinner paired with Uruguayan wines by Brazos.

Chef González's menu will include dishes like the Crudo de Mar tartare; Caviar Tostada with Black River Caviar sustainably farmed in Uruguay; Lobster al Ajillo served in a sizzling skillet with fresh herbs and aromatic spices; Squid Ink Paella tossed with fresh baby squid with aioli; and Braised Lamb Shoulder with slow-roasted seasonal vegetables and sweet potato puree, among others.

For dessert, the team is serving La Huella classics like Lemon Crostata and a Dulce de Leche Volcano. The pop-up will also be open for brunch, with highlights like chilled Gazpacho; a traditional La Huella Ceviche; savory Pumpkin and Queso Blanco Empanadas; and Grilled Local Fish with roasted mushrooms, crispy polenta cake and aioli. Desserts include the Passion Fruit Pie and Chaja, a Uruguayan sponge cake layered with seasonal fruits.

The pop-up dinners ($250 per person) will take place on Friday, June 21 and Saturday, June 22nd with one seating at 7:30pm. Brunch ($150 per person) is Sunday, June 23 at 1pm. Reservations can be made on OpenTable. For more information, including menus, visit amaraatparaiso.com.
