Head chef at Sur Mesure in Paris, holder of two Michelin stars and an avant-garde molecular gastronomy expert fascinated by Japanese cuisine and culinary culture, celebrity chef Thierry Marx took on Tokyo and Ginza in autumn 2016. The crown jewel of the restaurants opened inside the new Place building on September 24, Bistro Marx combines the three functions of fine dining restaurant, bistro and café, while the bar stays open until 2am – far later than the Ginza standard. If prices are kept reasonable and the bistro element gets the exposure it deserves, this one just might be one of the more exciting arrivals of 2016.
